Hawaiian Chicken
Recipe Ingredients:
4 boneless, skinless chicken breasts
1 cup pineapple juice
1/2 cup soy sauce
1/4 cup brown sugar
2 tbsp rice vinegar
1 tsp garlic powder
1 tsp ground ginger
Salt and pepper, to taste
1 cup fresh pineapple chunks
1 tbsp chopped green onions for garnish
Directions:
In a bowl, combine pineapple juice, soy sauce, brown sugar, rice vinegar, garlic powder, ground ginger, salt, and pepper. Stir to mix well.
Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over the chicken. Seal and refrigerate for at least 30 minutes (or overnight for more flavor).
Preheat the grill or a large skillet over medium-high heat. Remove the chicken from the marinade and discard the marinade.
Cook the chicken for 6-8 minutes per side, or until fully cooked through (165°F internal temperature).
During the last few minutes of cooking, add pineapple chunks to the grill or skillet to warm.
Serve the chicken topped with grilled pineapple and garnished with chopped green onions.
