Tropical Hawaiian Chicken


Ingredients:


4 boneless, skinless chicken breasts

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, sliced

2 tbsp olive oil

2 tbsp soy sauce

1 tbsp honey

1 tbsp lime juice

1 tsp garlic powder

1/2 tsp ground ginger

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Directions:


Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.

In a small bowl, whisk together olive oil, soy sauce, honey, lime juice, garlic powder, ginger, salt, and pepper.

Place chicken breasts on the sheet pan and brush with the sauce mixture.

Add the pineapple chunks, red and yellow bell peppers, and red onion around the chicken.

Roast in the oven for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F).

Garnish with fresh cilantro before serving. Serve with rice or a side salad for a complete meal.
